How it all started…
We spent our childhoods roaming the hills and woods of the Welsh Marches. Foraging and self sufficiency in fruit and vegetables was our way of life and preserving our produce as the seasons unfolded was part of the rhythm.
This savoury marmalade is packed with caramelised red onions and cooked with port and a sprinkle of thyme. A spoonful makes the most deliciously rich onion gravy and takes cheese on toast to the next level, served with a dressed side salad.
Ingredients: red onions 70%, Port 7%, thyme 1%, redcurrant jelly (red currants water,sugar), balsamic vinegar, red wine vinegar, salt, black pepper
